How do you freeze lychees?
It is recommend to freeze them with the skins left on. Simply place them in a plastic freezer bag, carefully squeezing out the excess air. While the lychees will turn brown, the taste is not compromised after freezing!
What do I do with my fresh lychees after they arrive?
It is recommended that you refrigerate your lychees as soon as they arrive. It’s best that you eat them within several days of receiving them because they have a very short shelf life. If you are not able to eat them within this time frame, it is recommended you freeze them. Frozen lychees are quite delicious — great in desserts, juices and ice-creams.
When are lychees in season?
In the northern hemisphere, lychee season occurs during the months of May, June & July. The harvest of this delicious fruit only lasts about 6 weeks.
